Is 40 the absolute maximum of players we can roster? If it is, does anyone have any strategies they've found effective on how to manage it if you have more than 40 players who will contribute?

the main thing is to add/drop your Starting pitchers daily so that they're only on your roster on the day they're starting

Yes, ESPN can't be configured to allow more. From my personal perspective it's the only downside to using ESPN - I find it superior to all other sites I've used for just about every other aspects of usability.
I agree with Saltman about cycling your SP off your roster. Use your watch list to track other players you own and can use - just remember to add them back onto the watch list after you drop anyone from your active roster.
